           From April through September, FRIDAYS ONLY,  you may witness live              
            the cheese bearers in action.  It is here where the actual transportation.
            weighing and trading of the cheese takes place in a colorful setting.

  EDAM  OPEN AIR  MARKET 
  
             Just like in the 16th century you will witness the arrival of the
             cheese by boat and horse drawn cart.  At the market the cheese
             is unloaded by special cheese carriers, then tested by the traders           
             to determine quality and price. When a batch goes down well with
             the traders the cheese is carried into the weighing house at which
             time the bargaining begins accompanied by the old ritual of 
            clapping hands. All this in a beautiful 17th century setting.

ALKMAAR  CHEESE MUSEUM 

     Even during the off season  you will be able to acquaint                         
     yourself with the age old tradition of Dutch cheese making.
     In this museum you will get an in-depth exposure to the various
     processes of cheese making and the equipment used over the
